September�s Recipe:

Vanilla Biscotti
  • 2 eggs (beat until foamy) - separate a small amount of egg white and save.
  • mix in
    • 1-2 T vanilla
    • 1 cup sugar
    • pinch of salt
    • Add 2 � cups of flour
    • 1 � tsp baking powder
  • Mix with fork
  • Flour table & Hands & Knead
  • Roll into two logs, flatten, and pat smooth
  • Flour & Butter cookie sheet
  • Brush logs with beaten egg white (which you should have separated from the eggs in the first step)
  • Cook 30 minutes @ 350
  • Cut while warm, at diagonal (helps if you just press down instead of actually trying to saw it�breaks easily)
  • Lay cut pieces on their side, and sprinkle sugar on them.
  • Bake for 20 minutes @ 300, flipping them over half way thru.
  • The longer you cook them the harder they get!!! So if you like them a tad softer, don�t cook them for so long.
Chocolate: Delete cup flour, use cup cocoa/Almond: Slivered almonds, 1 T extract/Peanut: Crushed Peanuts (food processes)
